From the Aosta Valley to Sicily, from chocolate pralines to doves to cream cakes: 60 of the best pastry chefs from all over Italy in a duel with icing, chocolate and surprise ingredients. From 24 to 27 February, at the Fiera del Tirreno CT in Marina di Carrara, the event "The Best Italian Sweets 2019" organized by the International Federation of Pastry, Ice Cream and Chocolate (FIPGC) kicks off: four days of sweetness and the art of confectionery during which competitors will have to give their best by trying their hand at four different specialties: making the Best Praline, Best Colomba, Best Ice Cream with a spoon and Best Single Portion. Finally, on the last day, the list of the best pastry shops in Italy will be drawn up.

Each individual pastry chef will thus have to create a dessert that respects tradition and that at the same time contains elements of innovation capable of surprising the judges. No guidelines and no themes will be given, the inspiration, creativity and competence of the individual will win, but also the ability to respect time, their own cleanliness and that of the work surface, the accuracy in the choice of ingredients. The winners of the four categories in the competition will be decided by an attentive and scrupulous jury made up of the FIPGC Excellence Team (the best recognized pastry chefs in the world scene) and the current Pastry and Cake Design World Champions such as Matteo Cutolo, Enrico Casarano, Giuseppe Russi , Fabio Orlando and Claudio Mosca, who will evaluate the aesthetics, taste and texture of each single preparation.

The coveted FIPGC gold, silver and bronze medals are up for grabs for those who will be able to convince the jury of their talent and professionalism. But that's not all, in the days when Carrara will be the pastry capital, the best patisseries, ice cream parlors and chocolate shops in Italy will also be named. Over 300 competing pastry shops will compete for the FIPGC "Top Quality" title, a certificate that testifies to the high quality of the business in all its forms: the selection of raw materials, the variety of the offer, the technologies, the type of machinery used in the laboratory but also the welcome, kindness and helpfulness of the staff in the sales force. Only excellence will be awarded, checked and certified in every detail. The commission, made up of professionals in the FIPGC sector, will thus award only the best pastry shops the famous recognition of the gold, silver or bronze Whip: a certificate of the highest quality to be displayed in your store.
